I was just curious. I was watching a car show where they rebored the engine. That got me thinking when it comes to the Pontiac much smaller 3.4 and 3.8 engines, what size could they be rebored to

Reboring is usually only done to return a cylinder wall to a useable state when rebuilding an engine. The aim is to remove any pitting, scoring etc. maximum recommended would be no more than 0.060 over bore as the cylinder walls are not so thick that they can be bored out endlessly. Plus, the coolant jacket is around the cylinders and removing too much meat can drastically affect the cooling of the engine. In terms of boring purely for a capacity increase I have seen and heard of it being done but in terms of longevity and power for your money it would be more economic to stroke the engine to a larger displacement.
